Changes to Delivery Locations


Now that summer is (almost) here and the markets are open we’ve made some changes to the locations in our online market for delivery.

Please check your account if you have selected the Chattanooga Riverside Wine & Spirits location or the Hixson location as we have deleted those drop-offs; you may select Chattanooga Wednesdays or Sundays for your new pickup and times.

Thanks, and please don’t hesitate to give us a call if you have any questions.

Dazi Acres: It's Delivery Week!


Just a reminder email that this week is delivery week to Crossville, Chattanooga, and points in between!

There is some wonderful beef liver on the market…have you tried it with a fig, bacon, and carmelized onion compote? It’s WONDERFUL and I’ll be happy to give you the recipe!

News

David has been working on the barn, even in this bitter cold, and we’re just about ready to pick up sheep and pigs. They’ll winter in there so they can stay warm with access to pasture any time they want it. These early pigs will be available by the 1/2 and whole hog in June/July, as well as providing pork cuts for the Meat and More CSA. Lamb will be available in the fall, also for the CSA.

Meat & More CSA

Our Meat & More CSA is turning out to be a big hit! Customers are really excited to be guaranteed our various meats including beef, chicken, pork, turkey, lamb, duck, and other goodies. You’ll also be able to add-on to your bi-weekly selection by going to our online market and selecting items to put in your cart.

New Drop Locations

As more and more people discover us we’ve needed to add more delivery locations. Additional locations may be added as we join other farmers’ markets or have more customers in a given area.

Our laying hens are busy, busy, busy, and we have soy-free, beyond organic eggs for sale!

Other News

While it’s supposed to be our quiet time of year we’re busy building a barn for the new piglets and sheep that are on their way. Clearing the woods of small undergrowth is a priority; we are creating beautiful glades through which the pigs will roam and from which the larger trees will have space to grow.

We’re going to be raising more beeves and hogs this year; the demand for our beef and pork far exceeded availability and we want to ensure we have by-the-cut selections for our non-CSA customers.

Speaking of beef…our beef is so tender you can cut a T-Bone with a butter knife! And tasty? Oh yes…beef that tastes like beef!

Good morning! Several new soaps are on the market this week, including 2 luxury bars that will amaze you with their creamy lathers and skin-smoothing capabilities. “Marla” is also back, soy-free and extra-moisturizing for these dry winter months.

I made some whipped body butter yesterday and was very pleased with how it turned out! I’m going to try it out on our Chattanooga customers today at the market and hope to be offering it here next week.

Turkeys
The turkeys are getting huge and are eating us out of house and home. ;-) Can’t wait to see everyone here on Tuesday, November 26th, between 12-5 pm CENTRAL time…I have some great recipes to prepare for you and you’ll get to try our pork!

Meat CSA, You Say?
We have worked out the details of our meat CSA (Community Supported Agriculture) box that we’ll be offering next spring*. We’re very excited about this! What a great way to get to sample all the Dazi meat without buying “the whole hog”. We’ll be featuring beef, chicken, pork, duck, rabbit, and lamb throughout the season.
*The meat CSA is only offered to our local customers with delivery locations in Crossville and Chattanooga, or pickup at the farm. Sorry to all our remote customers!

Good morning!

No time for recipes today but we do have a new, soy-free soap for you…Vanilla Bean Queen! Super dark (naturally) and just lovely, VBQ is made with shea butter, palm oil, olive oil, and coconut oil.

Keep an eye out next week for two new luxury soaps that are filled with glorious essential oils for these drier winter months. One is a luxury face bar with carrot seed oil…great for helping hide those pesky wrinkles.

Also, turkey lovers, keep an eye out for directions to Dazi Acres. We’ll provide details next week!

Good morning! I know most of us hate the time change but in the fall I love it! Getting up early is easy and there’s more light for us to get our morning chores done earlier. Last week we were waiting until nearly 8 to start and today we were done with chores and breakfast before 7:15!

This is the end, my only friend, the end…okay, enough homage to Jim Morrison. Let’s just say I miss them and can’t write about them yet.

Peanut Chicken
We absolutely love this recipe with pastured chicken! In fact, we love it so much we served it for our rehearsal dinner to family and friends the night before our wedding. It’s a great entree to serve to guests when they’re visiting, or just to give your family an inexpensive but yummy treat. We take this recipe from Martha Hall Foose’s A Southerly Course.
Hazy Daze Sweet Potato Pie
This is so easy to make it’s ridiculous and it tastes awesome with homemade whipped cream (which, having been timed by my kids, takes me 54 seconds to make!)

Good morning! Wow, the days are getting so much shorter! We can’t move chickens until the sun comes up which means we’re not moving them until almost 8 a.m.

Piggies Going to Market!
I hate to say it, but I’m going to miss those little…errr, BIG…buggers! But as of this Thursday, off they go for processing! We’ll meet everyone who’s purchased a hog at R&D Slaugherhouse, 27015 US HWY 127, Dunlap, TN 37327 between 9-12 Central Time on Friday, November 8. More details will be sent to those of you who ordered.

Turkey processing day is Tuesday, November 26! Mark your calender and plan on coming to the farm between 1-6 pm to pick up your lovely bird. First come, first served, so get there early if you want a big turkey.

Christmas is just around the corner and we will be having gift bags of various styles and sizes. You’ll be able to order all the bags and soaps you’ll need and we’ll pack them up with your spa goodies and even throw in matching tissue paper.

Did You Know?


That you can pre-order soaps that aren’t ready yet?
It takes soap 4-6 weeks to “cure”, ensuring that it’s safe to use and will hold up under use. But many times we go to the market and new bars sell out before we can get them listed on the site. Look for items marked Pre-Order on the market.
That our soap can be safely used as shampoo?
Not only will your hair smell wonderful and FEEL wonderful, but it also helps control, if not eliminate, dandruff. It’s also wonderfully safe for color-treated hair! I’ve spent countless dollars on “color safe” shampoos over the years and NOTHING has retained my color like our soaps. In fact, I started using the soap as a shampoo in the hopes that it would strip my color and it’s done everything BUT.
That it’s safe to use on babies?
That’s right! Although not tear-free, our soap is excellent and so much better for use in the baby’s bath. We especially like to use those soaps with essential oils rather than fragrance oils. Any of the lavender soaps also help calm any bug bites, dry spots, and baby! We also had a customer eliminate their baby’s cradle cap with just one use.

Good morning! Last night was our first freeze of the year and the fields were covered in white this morning. It was absolutely beautiful, especially when the sun started shining on it.

There are only three weeks left to order chicken (possible two if we process extra birds every week due to the cold). This last shelter full of healthy birds is it for the year!

Dazi Acres Signature Chicken Recipe

We found this recipe over at Southern Living but decided to modify it to get the most out of our pastured poultry. This is a truly wonderful way to enjoy chicken…we serve it for company all the time!

1/2 cup kosher salt
1/2 cup local honey
2 cups ice cubes
1 sweet onion, thinly sliced
2 fresh thyme sprigs or 1 tsp dried thyme
2 garlic cloves, peeled and sliced
1/2 teaspoon black peppercorns
2 (4- to 5-lb.) whole Dazi Acres’ chickens, cut into 4 pieces each (boneless breasts, legs whole with bone in, wings, carcasses reserved)
2 tablespoons olive oil
8 garlic cloves, unpeeled
2 fresh thyme sprigs or 1 tsp dried thyme

Preparation

1. Bring 4 cups water to a boil in a large Dutch oven over medium-high heat. Add kosher salt and honey. Reduce heat to low, and simmer, stirring occasionally, 2 to 3 minutes or until salt and honey dissolve. Transfer to a very large bowl; add ice and next 4 ingredients. Let stand, stirring occasionally, 30 minutes or until mixture cools to room temperature. Cover and chill 30 minutes to 1 hour or until cold.
2. Submerge chicken in cold brine. Cover and chill 6 to 8 hours.
3. Preheat oven to 300°. Remove chicken from brine; rinse and pat dry.
4. Heat 1 Tbsp. oil in a 14-inch nonstick or cast-iron skillet over medium-high heat. Add 4 unpeeled garlic cloves, some thyme, and half of chicken. Cook 5 minutes or until skin is browned and crisp. (The honey in the brine will brown the skin quickly.) Turn chicken and garlic, and cook 5 minutes or until browned. Remove chicken, garlic, and thyme and place in a roasting pan. Repeat with remaining oil, chicken, garlic, and thyme.
5. Bake chicken, skin side up, at 300° for 40 minutes or until a meat thermometer inserted into thickest portion registers 165°. (Breasts will cook faster than legs, so check for doneness after 10 minutes.) Cover with foil. Let stand 10 minutes before slicing.
6. We turn the oven up to 400° the last 5 minutes just to seal in all the wonderful juices.

Good morning! We hope everyone is enjoying this fabulous Fall…can the days be any nicer?

For those of you who don’t get to our Crossville or Chattanooga markets there are some new soaps online with more coming soon. One soap that is curing right now is Ocean Storm, a pretty, storm-colored bar that will bring back memories of the beach.

Chicken processing is winding down and there are only about three weeks left to order. If you’re not stocking up for the winter, now’s a good time to get a few in the freezer so you don’t have to buy any of that yucky store chicken.

Turkeys and pigs are sold out! Sorry for any of you that missed out but we’re going to have some exciting news in the coming weeks. Stay tuned!

Please be sure to place your chicken order (and turkey if you haven’t done so yet!) by Tuesday at 4 p.m. Eastern.

Remember, if you will be having your chicken delivered to one of our drop-off locations, you can pay cash and your credit card won’t be charged. We’ll just “cancel” the order upon delivery (this saves us all credit card charges!)
