Dazi Acres Signature Chicken Recipe

We found this recipe over at Southern Living but decided to modify it to get the most out of our pastured poultry. This is a truly wonderful way to enjoy chicken…we serve it for company all the time!

1/2 cup kosher salt
1/2 cup local honey
2 cups ice cubes
1 sweet onion, thinly sliced
2 fresh thyme sprigs or 1 tsp dried thyme
2 garlic cloves, peeled and sliced
1/2 teaspoon black peppercorns
2 (4- to 5-lb.) whole Dazi Acres’ chickens, cut into 4 pieces each (boneless breasts, legs whole with bone in, wings, carcasses reserved)
2 tablespoons olive oil
8 garlic cloves, unpeeled
2 fresh thyme sprigs or 1 tsp dried thyme

Preparation

1. Bring 4 cups water to a boil in a large Dutch oven over medium-high heat. Add kosher salt and honey. Reduce heat to low, and simmer, stirring occasionally, 2 to 3 minutes or until salt and honey dissolve. Transfer to a very large bowl; add ice and next 4 ingredients. Let stand, stirring occasionally, 30 minutes or until mixture cools to room temperature. Cover and chill 30 minutes to 1 hour or until cold.
2. Submerge chicken in cold brine. Cover and chill 6 to 8 hours.
3. Preheat oven to 300°. Remove chicken from brine; rinse and pat dry.
4. Heat 1 Tbsp. oil in a 14-inch nonstick or cast-iron skillet over medium-high heat. Add 4 unpeeled garlic cloves, some thyme, and half of chicken. Cook 5 minutes or until skin is browned and crisp. (The honey in the brine will brown the skin quickly.) Turn chicken and garlic, and cook 5 minutes or until browned. Remove chicken, garlic, and thyme and place in a roasting pan. Repeat with remaining oil, chicken, garlic, and thyme.
5. Bake chicken, skin side up, at 300° for 40 minutes or until a meat thermometer inserted into thickest portion registers 165°. (Breasts will cook faster than legs, so check for doneness after 10 minutes.) Cover with foil. Let stand 10 minutes before slicing.
6. We turn the oven up to 400° the last 5 minutes just to seal in all the wonderful juices.

For those of you who don’t get to our Crossville or Chattanooga markets there are some new soaps online with more coming soon. One soap that is curing right now is Ocean Storm, a pretty, storm-colored bar that will bring back memories of the beach.

Chicken processing is winding down and there are only about three weeks left to order. If you’re not stocking up for the winter, now’s a good time to get a few in the freezer so you don’t have to buy any of that yucky store chicken.

Turkeys and pigs are sold out! Sorry for any of you that missed out but we’re going to have some exciting news in the coming weeks. Stay tuned!
